Every time that Giles has fought a fighter who has a majority of his wins by submission, he has lost to them by submission. For example, Giles fought Gerald Meerschaert and Zak Cummings who both are great submission finishers, they both beat Giles by guillotine choke in the 3rd round. I would rank Du Plessis as even more dangerous than Gerald and Zak because of his knockout ability as well.
I've got Du Plessis by Sub at +500. Just not sure if it will be Round 2 or Round 3.

Giles is a much more known quantity, but I feel like we can see his ceiling. I doubt he ever gets to a top ten ranking, or possibly stays not ranked at all. Du Plessis has more question marks, but his upsides seem so much higher I've got to favor him.
