Fish, what time is it over there?   I have a whole chicken deboned, marinated and well seasoned sous viding to 140 right now. I just set it up and getting the grill got to go finish it off with some Smokey charcoal flavor.  Turned the bones into a jus and charred up some cipollini onions, roasted tom & mushrooms and rendered down some lardons. That will go into the jus with a red wine gastrique.

Fascinating first round. Cavillo doesn't appear strong enough to just force a takedown against Lee. She's going to have to rely on technique and Lee tiring to secure those good positions. Lee has to literally keep doing this. Volume and more volume, and then get a good power shot or two. She's hurting Cavillo.
