Hmm. This is an interesting question. Number 1 is probably Nogueira/Cro Cop, maybe Nog/Fedor but I honestly didn't give Fedor much of a chance. On second thought I probably anticipated Nog/Fedor II more.

I was super pumped for Hendo vs Fedor. I wasn't into MMA yet when Cro Cop vs Fedor happened, but I heard that it was pretty anticipated.
