So there is already some debate on whether or not they should have waited to crown the winner of the Aldo v. Grispi fight with the new belt. Any thoughts?

I consider Aldo the legitimate champion and it should be his belt to defend.  I think of it as the UFC absorbing his title at the same time they absorb the division. There is no other fighter with a legitimate claim to the belt so they might as well call the champion the champion coming into the next fight.
