Why don’t more fighters just stick to a diet that slims them down more naturally, than attempt to cut a ton of weight in the span of hours? I tried looking up forums for this but I couldn’t find any specific answers.

They aren't losing unnecessary fat. They're dehydrating themselves so they can come into the cage at as heavy a weight as possible, and as long as they rehydrate properly it will have little effect on performance.
