Could he be champ? Yeah, I think if someone other than Hendricks wins the title he can. Like if Lawler beats Hendricks, then hell yeah Nick can be the champ. I do, however think that is pretty unlikely. I may be overrating Johnny a little, but I think he beats all these guys now.

He seems to want a big fight if he's gonna come back but I'd love to see him fight Jordan Mein!

I also think that Condit, MacDonald, Matt Brown, Lombard and Koscheck would give Nick Diaz a hard time. I do not see Nick ever becoming a UFC title holder. It's just not in him. When he left the UFC from 2006 - 2011, he blew his career opportunities sky high and he's doing it again now. He lacks the career insight most take for granted. Frank Shamrock is another example of someone who threw their career legacy down the toilet by leaving the UFC.

Lawler- Diaz has already beaten him, that being said both are vastly different fighters from that time. I think Diaz would easily be the favorite tho -- far superior boxing and Lawler isn't the type to mix it up on the ground nor do I think he has the BJJ chops to survive.
Mcdonald- I don't think he responds well to pressure, meaning Diaz probably beats him. Nate =/= Nick people.
Condit- Already beat Diaz in a seemingly controversial manner. I don't see what changes next time out.
Maia- He's having less success now that people are realizing he's going straight for the takedown as soon as the bell rings. Can't have too predictable of a gameplan. Still he could probably put Diaz on the ground if he doesn't back up too much.
T-wood- Tough fight to call. As I remember his cardio isn't all that hot, meaning that Diaz could tire him out.
Shields- they probably wouldn't fight each other.
Ellenberger- I mean Diego was roughing him up in round 3..... He probably looks great against Diaz in round 1 then gets his **** pushed in.
Overall, a bunch of competitive matchups, with these fights inching towards Diaz if these fights were to be 5 rounders.
All of this is hypothetical b/c who knows if Diaz wants to fight again/would he even be the same fighter.

Hendricks, Lawler, Brown, MacDonald, Lombard. It would be interesting if Condit decided to abandon the kick and run strategy and stand and bang. But this is the fight game. Who knows what a guy will do?
Other possibilities might include: Kampmann, Ellenberger, Koscheck, Rick Story, Siyar Bahadurazda, Erick Silva & Brandon Thatch. These all could be fun slugging matches.
