Rashad Evans will try to join that club tomorrow night (Rashad's win over Brad Imes in the TUF 2 finale counts as an official fight; his fights "in the house" do not); and besides, the middleweight division in the UFC is both weak and chaotic - and I'm sure that many of you here think that Cowboy could beat Bisping! Diego Sanchez has wins at 185, 170, and 155.
Rich Franklin if you count his two wins over Wanderlei at catch weights.
Dan Henderson if you count his wins back in the pre Zuffa UFC days when middleweight was 199 lbs.
Same for Wanderlei Silva. Who fought at 185, 199 and 205

And Cerrone has more than enough size and reach to be competitive at middleweight.

Yancy Medeiros is another one, went from LHW or MW down to LW.
